Gildo Ciresa: The cheese-making tradition

Gildo Ciresa, based in Valsassina valley (north Italy), renowned for its excellent, high quality cheeses, is an artisan-style, family-run dairy business which continues the job started by his grandfather and has been passed down from father Gildo for three generations. They are mainly known as producers of Taleggio PDO, Gorgonzola PDO, Quartirolo PDO and are specialized in the production of goat cheeses. The quality of their products, sold throughout Italy and exported to many countries in Europe, comes from this ancient recipe:

• traditional processing

Gildo Ciresa`s philosophy is based, without compromises, on the maintenance of the taste, quality, genuineness of the cheeses, on essential principles: the human relationship, the satisfaction of the clients, suppliers, collaborators, the respect for the human resources and the respect for the gifts of the nature.
