(Serves 3 – 4 persons)
Ingredients: 4 tbsp olive oil, 2 garlic cloves, 250 g cherry tomatoes, 400 g mixed seafood (salmon, king prawns, mussels, squid), 1 tbsp finely chopped fresh parsley, 3 – 4 tbsp double cream, 250 g Pappardelle pasta, salt and black pepper.
Heat the oil in a heavy based pan, add the chopped garlic and fry for 5 seconds; then add the cherry tomatoes cut in halves, salt and black pepper. Cook stirring occasionally for about 3 minutes; then add the seafood, season with a little bit more of salt and black pepper and cook for about 8 minutes stirring occasionally. Meanwhile cook the pasta. At the end of cooking add the parsley and double cream to the sauce. Cook for ½ minute, remove from the heat, add the cooked pasta, mix all well and serve.
