Ingredients for meatballs: 300 g pork sausages (skinless and chopped), 300 g minced beef, 1 egg, black pepper, 2 garlic cloves, 1 tbsp finely chopped parsley, 3 tbsp breadcrumbs or 1 cooked, mashed potato, plain flour. We used 500 g of Spaghetti Ruvidi and parmesan to garnish.
Heat the oil in a heavy based frying pan, add the chopped onion and cook over a medium heat until golden. Then add the chopped tomatoes (Pomodori Pelati) or tomato sauce (Passata di pomodoro), salt and black pepper. Cook over a medium to low heat.
Meanwhile, combine the pork sausages (skinless and chopped) with minced beef, 2 chopped garlic cloves, 1 egg, 1 tbsp parsley, 3 tbsp of breadcrumbs or 1 cooked, mashed potato and season to taste with black pepper (don’t add extra salt to the meat if you are using our sausages – these have salt and if you add some extra you might make the meal to salty). Spread out the flour on a plate and shape the meat mixture into walnut-sized balls and roll in the flour. Shake off any excess. Fry all the meat balls in oil for about 8 – 10 minutes on medium heat. When ready, transfer the meatballs into the tomato sauce. Cook over a low heat for about 5 minutes then add the cooked, drained pasta tossing well to coat (we used our Spaghetti ruvidi 500 g) . Serve immediately with grated parmesan and garnish with fresh parsley leaves.
